Just ignore anything followed by (M) if you want to avoid Minmatar.
You are correct that you can't just jump into heavy armor missile ships, mainly due to their status as T2 vessels. Even if you were to buy a character it would still be counter-recommended because they are not simple to fly, particularly if you have close to zero experience otherwise. That tends to make shiny ships turn into expensive losses pretty quickly.
If you are intent on going on a full-missile focus, I recommend you start on a Caldari/shield missile plan, and cross-train Amarr/armor once you feel ready to. There are good analogues for what you'll be flying anyway, which do allow you to segue into the ships you want to fly. For example:
- A Malediction flies similarly to a Condor or Crow. It is a bit poorer at applying damage, but is harder to hit and tankier than either one. It's also usually somewhat slower (though for an interceptor that's not saying much).
- A Vengeance flies similarly to a Hawk, just slower and with a bias more towards tons of hit points rather than a constantly refilling HP bar.

Anyway I've rambled enough. tl;dr: there is always a way, but compromise may be necessary.
